Peel the dragon fruit and set aside half of it, cut into small cubes, for decoration.

In a blender, combine the remaining half of the dragon fruit, ice cream, and Rompope Santa Clara.

If the mixture becomes too soft, freeze it for a few minutes to firm it up.

Serve in your favorite pre-frozen glass or cup.

Garnish with the reserved dragon fruit cubes.

Note
- For a more intense dragon fruit flavor, use frozen dragon fruit.
- You can also add other fruits to your ice cream, such as strawberries, mangoes, or pineapple.
- If you don't have a blender, mash the dragon fruit with a fork and mix it with ice cream and Rompope Santa Clara.
- This ice cream is also a great way to use up leftover dragon fruit.
