Description

Indulge in the vibrant and exotic flavors of Horizon Day Delight, a refreshing and creamy treat that captures the essence of a perfect summer day. This delightful recipe combines the striking color and subtle sweetness of red dragonfruit with the creamy richness of vanilla or strawberry ice cream, all enhanced by a touch of Rompope Santa Clara, a traditional Mexican liqueur. Perfect for a special occasion or simply to elevate your everyday dessert experience.

Ingredients
  • 2 ounces Santa Clara Rompope
  • Blue CuraƧao (enough to fill the glass at an angle and create a layer)
  • Orange blossom water (amount to taste, a few drops recommended)
  • Garnish: orange slice
Instructions
  1. In a blender, combine the remaining half of the dragonfruit, ice cream, and Rompope Santa Clara.

  2. Tilt a chilled glass at an angle and carefully pour Blue Curacao into the glass, filling it completely. You want to create a layer of Curacao that goes from thick at the bottom to thin at the top, where the glass tilts upwards.

  3. Freeze the tilted glass with Blue Curacao for several hours, or until the Curacao is completely frozen. (Safety Tip: Be sure the glass you use is freezer-safe.)

  4. Once frozen, let the glass sit at room temperature for a few minutes to allow the outside layer of ice to melt slightly. This will make it easier to add the next layer.

  5. Add a few drops of orange blossom water to the glass (adjust to your taste preference).

  6. Gently pour the Santa Clara Rompope over the back of a spoon, allowing it to layer on top of the blue Curacao ice without disturbing the blue layer.

  7. Garnish with an orange slice to resemble a setting sun.

Note

Tips:

  • You can adjust the amount of orange blossom water to your taste preference. Start with a few drops and add more if desired.
  • If you don't have orange blossom water, you can substitute with a few drops of rose water.
  • Be careful when pouring the Rompope to avoid disturbing the Curacao layer.
  • For a more dramatic presentation, you can use a long-handled spoon to slowly pour the Rompope over the back of the spoon, allowing it to gently layer on top of the blue Curacao ice.
