Santa Clara Banana Lover’s Bread

Ingredients
  • 2 all-purpose flour
  • 1 baking powder
  • 1/2 baking soda
  • 1/2 salt
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/2 cup unsalted butter, melted
  • 2 eggs
  • 1/2 cup Santa Clara Rompope
  • 2 mashed ripe bananas
  • 1 cup chopped walnuts
  • 1/4 cup blueberries
  • 1 melted butter
  • 1 sugar
  • 1 banana, sliced for decoration
Instructions
  1. Preheat: Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x5 inch loaf pan or an oven safe dish.

  2. Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.

  3. Mix the wet Ingredients: In a large bowl, cream together the granulated sugar, brown sugar, and melted butter. Beat in the eggs one at a time, then stir in the Rompope Santa Clara.

  4. Combine: Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Stir in the mashed bananas and 1/2 cup walnuts.

  5. Pour: Pour the batter into the prepared pan.

  6. Bake: Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

  7. Cool: Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

  8. Prepare the toppings: To make the caramelized bananas and walnuts, heat the melted butter and sugar in a large skillet over medium heat. Add the banana slices and walnut pieces and cook for 5-7 minutes, or until caramelized.

  9. Serve: Top the banana bread with caramelized bananas, walnuts and blueberries. ENJOY!
